# Instructions:

01 - Heat vegetable oil in a large pot over medium heat. Whisk in the flour and stir continuously for approximately 15 minutes until the mixture develops a deep brown color. Monitor closely to avoid burning.
02 - Add diced onion, bell pepper, celery, and minced garlic to the roux. Cook for 5 to 7 minutes, stirring often, until vegetables are softened and aromatic.
03 - Incorporate diced chicken and sliced sausage into the pot. Sauté for about 5 minutes until the chicken pieces are lightly browned.
04 - Pour in the diced tomatoes and chicken broth. Stir in smoked paprika, thyme, bay leaf, and optional cayenne pepper. Bring to a gentle simmer and cook for 30 minutes, stirring occasionally. Season generously with salt and black pepper.
05 - Add the prepared shrimp to the simmering gumbo and cook for 5 to 7 minutes until shrimp are opaque and cooked through.
06 - Stir in chopped parsley and green onions. Serve the gumbo hot over bowls of cooked white rice.
