Shrimp Cheese Quesadillas (Print Version)

# Ingredients:

01 - Olive oil.
02 - 16 small corn tortillas.
03 - 2 cups shredded monterey jack cheese.
04 - 1 cup frozen salad shrimp, thawed and drained.
05 - 2 ripe avocados, cut into small cubes.
06 - Sea salt or kosher salt.
07 - Chili powder.
08 - 8 ounces queso fresco.

# Instructions:

01 - Heat teaspoon olive oil in skillet over medium-high heat.
02 - Add tortilla, spread with Monterey Jack, shrimp, avocado, seasonings and queso fresco.
03 - Top with second tortilla, flip carefully and cook until browned.
04 - Cool few minutes before cutting.
05 - Continue with remaining quesadillas, adding oil between batches.

# Notes:

01 - Can use flour tortillas instead of corn.
02 - Customize ingredients to preference.
03 - Add oil between each batch.
