Add avocado oil to a cast iron pan with a lid on medium-high heat.

Add cabbage and fry until edges are crispy. Add butter, salt and pepper during this time.

Once all sides are crispy, add water to create steam. Cover with lid and braise for 5 minutes on lower heat.

In a bowl, combine all sesame sauce ingredients.

Check if cabbage middle is tender with a knife. If not, cook 5 more minutes. When water evaporates and cabbage is ready, pour sauce over and saute until incorporated.
