Breakfast Egg Bites with Sausage (Print Version)

# Ingredients:

01 - 1 pound ground breakfast sausage
02 - 6 large eggs
03 - 2 tablespoons salted butter, melted
04 - 1 3/4 cups all-purpose flour
05 - 2 teaspoons baking powder
06 - 1 (7 ounce) can diced green chilis
07 - 1 1/2 cups sharp cheddar cheese

# Instructions:

01 - Preheat oven to 400°F.
02 - Heat nonstick pan over medium heat. Cook ground sausage for about 5 minutes until no longer pink, breaking it up with spatula. Remove from heat and cool for 10 minutes.
03 - In large mixing bowl, combine cooked sausage, eggs, and melted butter. Whisk vigorously to beat eggs.
04 - Add flour and baking powder to bowl. Whisk until no dry flour pockets remain.
05 - Gently fold in shredded cheese and diced green chilis until evenly distributed throughout batter.
06 - Use cookie scoop or large spoon to drop 12 large balls of batter onto baking sheet. Bake for 10 minutes until middle is set.

02 - Can omit green chilis if desired
