03 - 2 teaspoons baking powder
04 - 0.25 teaspoon salt
05 - 1 tablespoon sugar
06 - 180 millilitres whole milk, at room temperature
07 - 1 large egg
08 - 1 teaspoon vanilla extract
09 - 2 tablespoons unsalted butter, melted
10 - 1 tablespoon maple syrup

→ For Cooking and Serving

11 - Butter or cooking spray, for greasing pan
12 - Maple syrup, for serving

→ Optional Garnishes

13 - Fresh berries
14 - Scrambled eggs

# Instructions:

01 - Place sausage patties in a skillet over medium heat. Cook until both sides are deeply golden and centres are thoroughly cooked, about 4–6 minutes per side. Transfer to paper towels to drain excess fat.
02 - In a large bowl, sift together flour, baking powder, salt, and sugar. In a separate bowl, whisk milk, egg, vanilla extract, melted butter, and maple syrup until blended. Pour wet mixture into dry ingredients and gently mix until just combined; a few lumps are fine.
03 - Heat a nonstick skillet or griddle over medium. Lightly grease with butter or cooking spray. Dip each cooked sausage patty into the batter, ensuring an even coating. Place the coated patties onto the skillet and cook undisturbed until bubbles form on the surface, 2–3 minutes. Flip gently and cook another 2 minutes until golden and cooked through.
04 - Transfer sausage dipped pancakes to plates. Serve hot with butter and generous drizzle of warm maple syrup. Optionally, plate with fresh berries or scrambled eggs.

# Notes:

01 - Allow pancakes to cool completely before freezing; reheat in a toaster or microwave for convenient breakfasts.
02 - For dairy-free preparation, substitute non-dairy milk and vegan butter.
03 - For gluten-free needs, use a gluten-free all-purpose flour blend.
04 - Do not overmix the batter; minimal stirring ensures fluffiness.
05 - Ensure the skillet is fully preheated before cooking to achieve golden-brown pancakes.
06 - Try turkey or chicken sausage for a lighter alternative, or experiment with blueberry sausage for added flavour.
07 - Serve with a dusting of powdered sugar or a sprinkle of cinnamon for a flavour boost.
