Layered Pastry Cake (Print Version)

# Ingredients:

01 - 5½ cups all-purpose flour.
02 - Pinch of salt.
03 - 3½ sticks unsalted butter, cold and cubed.
04 - 2 large eggs.
05 - ¾ cup ice water.
06 - 1½ tablespoons apple cider vinegar.
07 - 1 teaspoon vanilla paste.
08 - 6 large egg yolks.
09 - 1 cup granulated sugar.
10 - ⅔ cup all-purpose flour.
11 - 4 cups whole milk, divided.
12 - 1 cup unsalted butter.
13 - 2 teaspoons vanilla paste.

# Instructions:

01 - Pulse flour, salt, butter in food processor until crumbly. Mix in eggs, water, vinegar, vanilla until just combined.
02 - Divide dough into 8 portions, flatten into disks, wrap and refrigerate 2-3 hours.
03 - Roll each portion into thin circle. Cut to 8-inch diameter, prick with fork. Bake at 375°F for 10-12 minutes.
04 - Whisk egg yolks, sugar, flour with some milk. Heat remaining milk, temper into eggs. Cook until thickened.
05 - Stir in butter and vanilla. Cool completely.
06 - Layer pastry circles with cream. Cover top and sides with cream and crushed pastry crumbs.
07 - Refrigerate at least 3 hours or overnight before serving.

# Notes:

01 - Can make dough ahead and refrigerate.
02 - Save pastry trimmings for crumb coating.
03 - Needs time to set for layers to soften.
