Ridiculously Healthy Carrot Oat Cookies (Print Version)

# Ingredients:

→ Group-1

01 - 1 medium carrot, peeled and chopped into big chunks
02 - 3 Medjool dates, pitted

→ Group-2

03 - 1 medium ripe banana
04 - 1 cup old fashioned oats
05 - ¼ cup chopped walnuts
06 - ½ teaspoon ground cinnamon
07 - ½ teaspoon ground ginger
08 - ¼ teaspoon freshly grated nutmeg
09 - 2 pinches of salt

# Instructions:

01 - Preheat oven to 360° F (190°C). Line a baking sheet with parchment paper and set aside.
02 - Add carrots and dates into a food processor. Process for a few seconds until finely chopped.
03 - Add all Group-2 ingredients and pulse about 5 times until combined. Do not over-process. Remove the blade and stir the mixture to evenly combine.
04 - Using an ice cream scoop, portion about 3 tablespoons of dough into balls and place them on the prepared baking sheet, spacing them evenly.
05 - Using a flat spoon, gently pat each dough ball into ½-inch thick discs.
06 - Bake for 25 to 30 minutes until deep golden around the edges. Place the pan on a wire rack to cool completely.

# Notes:

01 - Use very ripe bananas for natural sweetness and soft Medjool dates for easier grinding and binding. If using Noor dates, soak them in water for 30 minutes before draining.
02 - For the best chewy texture, use old-fashioned or rolled oats. Substitute walnuts with toasted pecans or sliced almonds if preferred.
