Rhubarb Dream Bars (Print Version)

# Ingredients:

→ Crust

01 - 1 cup all-purpose flour
02 - 1/2 cup sugar
03 - 1/2 cup butter, room temperature

→ Filling

04 - 2 large eggs
05 - 1 cup sugar
06 - 1/4 cup flour
07 - 1/4 tsp salt
08 - 2 cups diced rhubarb

# Instructions:

01 - Preheat oven to 350°F (175°C). Line the bottom of an 8×8-inch pan with parchment paper, ensuring the paper comes up the sides for easy removal of the bars. Blend the crust ingredients in a food processor, then press the mixture into the prepared pan. Bake for 15 minutes. The crust will remain pale in color.
02 - While the crust is baking, mix eggs, sugar, flour, and salt in a bowl. Whisk well for about 1 minute but avoid overmixing. Stir in the diced rhubarb.
03 - Pour the filling onto the hot crust and bake in the preheated oven for 40–45 minutes until set. Allow the bars to cool completely.
04 - Once cooled, lift the bars from the pan using the parchment paper. Cut into squares and serve.
