Preheat oven to 350°F (175°C). Line the bottom of an 8×8-inch pan with parchment paper, ensuring the paper comes up the sides for easy removal of the bars. Blend the crust ingredients in a food processor, then press the mixture into the prepared pan. Bake for 15 minutes. The crust will remain pale in color.

While the crust is baking, mix eggs, sugar, flour, and salt in a bowl. Whisk well for about 1 minute but avoid overmixing. Stir in the diced rhubarb.

Pour the filling onto the hot crust and bake in the preheated oven for 40–45 minutes until set. Allow the bars to cool completely.

Once cooled, lift the bars from the pan using the parchment paper. Cut into squares and serve.
