Authentic Mexican Rice (Print Version)

# Ingredients:

→ Rice Base

01 - 2 tablespoons vegetable oil
02 - 2 cups long-grain white rice
03 - 1 cube chicken-flavored bouillon
04 - 4 cups water (or 4 cups lower sodium chicken broth and no bouillon)
05 - 1 (8-ounce) can tomato sauce

→ Seasonings

06 - 1 teaspoon minced garlic
07 - 1 teaspoon salt
08 - 1 teaspoon ground cumin
09 - Dash of garlic pepper

→ Garnish

10 - Chopped fresh cilantro (optional)

# Instructions:

01 - Heat vegetable oil in a large frying pan over medium heat. Add the rice and cook, stirring frequently until it turns golden brown, about 5 minutes. This toasting step is essential for authentic flavor and texture.
02 - While the rice is toasting, combine the bouillon cube and water in a microwave-safe container. Microwave for 3 minutes or until the bouillon is fully dissolved. Alternatively, use 4 cups of prepared chicken broth instead.
03 - Once the rice is golden brown, add the hot bouillon mixture (or chicken broth), tomato sauce, minced garlic, salt, cumin, and garlic pepper to the pan. Stir well to combine all ingredients.
04 - Cover the pan with a tight-fitting lid and reduce heat to low. Let the rice simmer for 30-40 minutes, stirring occasionally to prevent sticking. Cook until all liquid is absorbed and rice is tender.
05 - When the rice is fully cooked and no liquid remains, remove from heat. Fluff the rice with a fork before serving to separate the grains. If desired, top with chopped fresh cilantro for added flavor and color.

# Notes:

01 - This authentic-tasting Spanish rice pairs perfectly with any Mexican main dish like enchiladas, tacos, or burritos.
02 - The key to flavorful rice is toasting it properly before adding the liquid. Don't rush this step!
03 - For a vegetarian version, use vegetable bouillon or broth instead of chicken.
