Elegant Raspberry Tiramisu (Print Version)

# Ingredients:

→ Raspberry Jam

01 - 500g frozen raspberries
02 - 100g granulated sugar
03 - 1 tablespoon lemon juice

→ Raspberry Syrup

04 - 100g granulated sugar
05 - 120g water
06 - 30g frozen raspberries
07 - 3 tablespoon limoncello (optional)

→ Mascarpone Filling

08 - 450g mascarpone cheese, cold
09 - 120g powdered sugar
10 - 2 tablespoon lemon juice
11 - 1 teaspoon vanilla paste
12 - 480g heavy cream, cold

→ Assembly

13 - 25 ladyfinger cookies
14 - Fresh raspberries and lemon slices for decoration

# Instructions:

01 - Combine raspberries, sugar and lemon juice in a saucepan. Heat until bubbling, then simmer 23-25 minutes until thickened. Cool completely in fridge.
02 - Heat sugar, water and raspberries until boiling. Simmer 3 minutes, strain, add limoncello if using. Cool to room temperature.
03 - Beat mascarpone, powdered sugar, lemon juice and vanilla until combined. Add heavy cream and whisk until medium-stiff peaks form.
04 - Spread thin layer of mascarpone cream in dish. Dip ladyfingers in raspberry syrup and layer. Add half the mascarpone cream and half the raspberry jam.
05 - Repeat layering with remaining ladyfingers and mascarpone cream. Cover and refrigerate minimum 8 hours or overnight.
06 - Before serving, spread remaining raspberry jam on top. Decorate with fresh raspberries and lemon slices if desired.

01 - Must chill at least 8 hours before serving
02 - Can be made 1-2 days ahead
03 - Save some jam for final topping before serving
