Raspberry Almond Snowball Cookies (Print Version)

# Ingredients:

01 - 1 cup unsalted butter, softened.
02 - 1/2 cup powdered sugar, plus extra for dusting.
03 - 1 teaspoon almond extract.
04 - 2 cups all-purpose flour.
05 - 1/2 cup finely chopped almonds or almond flour.
06 - 1/4 teaspoon salt.
07 - 1/2 cup raspberry preserves.

# Instructions:

01 - Turn oven to 350°F. Put parchment paper on a baking sheet.
02 - Beat butter and powdered sugar until fluffy. Mix in almond extract.
03 - In another bowl, mix flour, chopped almonds, and salt.
04 - Add dry mix to butter mix slowly, stirring just until combined.
05 - Roll dough into 1-inch balls. Make a dent in each, add preserves, then seal and re-roll smooth.
06 - Put cookies on sheet and bake 12-15 minutes until edges turn light golden.
07 - Let cool a few minutes. Roll warm cookies in powdered sugar.

# Notes:

01 - Let cookies cool slightly before dusting with sugar.
02 - Don't overfill with preserves to prevent leaking.
03 - Nice with tea or coffee.
