Easy Ramen Carbonara (Print Version)

# Ingredients:

→ Base

01 - 3 packages ramen noodles
02 - 4 slices bacon, diced
03 - 3/4 cup chopped onion
04 - 2 cloves garlic, minced

→ Sauce

05 - 2 large eggs
06 - 1 cup grated Parmesan cheese
07 - 1/2 tsp salt
08 - pinch red pepper flakes

→ Add-ins

09 - 3/4 cup frozen peas
10 - Fresh parsley, chopped

# Instructions:

01 - Fry bacon until crispy, about 6-7 minutes. Remove bacon, keep drippings.
02 - Sauté onion and garlic in bacon drippings until softened, 4-5 minutes.
03 - Boil ramen (no seasoning packets), add peas last minute. Reserve 3/4 cup water before draining.
04 - Whisk eggs, cheese, cooked onions, bacon drippings, salt, and pepper flakes.
05 - Toss hot noodles with sauce, add bacon and pasta water gradually. Garnish with parsley.

01 - Use fresh grated cheese
02 - Can substitute bacon with pancetta
03 - Temper eggs to prevent scrambling
