Leftover Chicken Pasta (Print Version)

# Ingredients:

01 - 150g pasta.
02 - 180g leftover cooked chicken, chopped.
03 - 0.5 tablespoon olive oil.
04 - 100g light cream cheese.
05 - 60ml semi skimmed milk.
06 - 100g sweetcorn.
07 - 45g spinach.
08 - 20g Parmesan, grated.

# Instructions:

01 - Cook pasta in boiling water for 10 minutes.
02 - Heat olive oil over medium heat, add chopped chicken and cook until browning, about 5 minutes.
03 - Add cream cheese and milk to chicken. Cook until cheese melts, stirring regularly.
04 - Stir in sweetcorn, spinach, and Parmesan. Cook until spinach wilts.
05 - Drain pasta, reserving some water. Mix pasta and reserved water into chicken mixture until well coated. Season to taste.

# Notes:

01 - Can use fresh tagliatelle for faster cooking.
02 - Reserved pasta water makes sauce silky.
03 - Can add chili flakes for spice.
