Savory Pastry Bake (Print Version)

# Ingredients:

01 - 1 frozen puff pastry sheet.
02 - 4 slices bacon, cut into small pieces.
03 - 1 onion, sliced thin.
04 - 1 pound potatoes (2-3 small), peeled and sliced thin.
05 - 1 teaspoon each chives, parsley, minced.
06 - 4 oz grated cheese (cheddar, colby jack, or Jarlsberg).
07 - Salt and ground black pepper to taste.
08 - Dry herbs and spices to taste.
09 - 1 egg (for egg wash).

# Instructions:

01 - Preheat oven to 350°F. Thaw puff pastry but keep cold. Prep ingredients.
02 - Cook bacon until crisp. Drain on paper towels.
03 - Cook onions in 1/2 tablespoon bacon grease until tender and golden.
04 - Mix sliced potatoes with salt, pepper, herbs. Let rest to release moisture, then drain.
05 - Roll pastry to 12x12 inches. Layer potatoes, onions, bacon, cheese on half. Leave border.
06 - Fold pastry, seal edges with egg wash and fork. Cut slits, brush top with egg wash.
07 - Bake 45 minutes until golden and puffy.

# Notes:

01 - Can make double batch on large baking sheet.
02 - Prep ingredients ahead but assemble just before baking.
03 - Drain potato liquid to prevent soggy pastry.
