Pollo Loco Rice (Print Version)

# Ingredients:

01 - 1.5 pounds chicken breast.
02 - 2 teaspoons olive oil.
03 - 1 teaspoon adobo seasoning.
04 - 10 ounces yellow saffron rice.
05 - 1 cube tomato bouillon.
06 - 2½ cups water.
07 - 3 ounces white queso dip.
08 - 2 tablespoons milk.

# Instructions:

01 - Pat chicken dry, season with adobo.
02 - Brown seasoned chicken pieces in oil, about 6 minutes total.
03 - Add rice, bouillon, water. Bring to boil then simmer covered 20-25 minutes.
04 - Stir in queso and milk, fluff with fork.

# Notes:

01 - Cover lid vent hole for proper rice cooking.
02 - Use fresh refrigerated queso.
03 - Cut chicken against grain.
