Pollo Loco Rice

# Ingredients:

1.5 pounds chicken breast.

2 teaspoons olive oil.
03 -
1 teaspoon adobo seasoning.
04 -
10 ounces yellow saffron rice.
05 -
1 cube tomato bouillon.
06 -
2½ cups water.
07 -
3 ounces white queso dip.
08 -
2 tablespoons milk.
# Instructions:

Pat chicken dry, season with adobo.

Brown seasoned chicken pieces in oil, about 6 minutes total.

Add rice, bouillon, water. Bring to boil then simmer covered 20-25 minutes.

Stir in queso and milk, fluff with fork.

Cover lid vent hole for proper rice cooking.

Use fresh refrigerated queso.

Cut chicken against grain.
