Heat a waffle maker and lightly coat both plates with non-stick cooking spray.

On a lightly floured surface, roll out pizza dough to approximately 0.5 cm thick. Cut into squares or circles matching the size of the waffle maker compartments.

Place one piece of dough on the waffle maker plate. Spoon around 1 tablespoon pizza sauce onto the centre, add a portion of mozzarella, pepperoni, and a pinch of Italian seasoning. Cover with another piece of dough and gently press the edges to seal.

Close the waffle maker and cook for 3 to 5 minutes until the exterior is golden brown and crisp.

Carefully remove the waffles and allow them to cool briefly. Serve warm with remaining pizza sauce for dipping.
