Pineapple Quick Bread (Print Version)

# Ingredients:

01 - 1 1/2 cups all-purpose flour.
02 - 1/8 tsp salt.
03 - 2 tsp baking powder.
04 - 1/2 cup unsalted butter, softened.
05 - 1/4 cup granulated sugar.
06 - 2 large eggs.
07 - 1 cup crushed pineapple, drained (reserve juice).
08 - 1/4 cup pineapple juice (from can).
09 - 2 tbsp milk.
10 - 2 tbsp pineapple juice (from can).
11 - 1 cup powdered sugar.
12 - 1 tsp vanilla extract.

# Instructions:

01 - Heat oven to 350°F. Grease loaf pan.
02 - Sift flour, salt, baking powder together.
03 - Cream butter and sugar until fluffy.
04 - Beat in eggs one at a time.
05 - Alternately add pineapple juice and dry ingredients to butter mixture.
06 - Stir in milk, fold in drained pineapple.
07 - Pour into pan, bake 50-55 minutes until done.
08 - Cool 10-15 minutes in pan, then remove to rack.
09 - Mix glaze ingredients, pour over cooled bread.

# Notes:

01 - Use canned pineapple for best results.
02 - Can freeze unglazed bread.
03 - Drain pineapple well to prevent dense bread.
