Piña Colada Mug Cake (Print Version)

# Ingredients:

01 - 1 box Angel Food Cake mix
02 - 1 box yellow cake mix
03 - Non-stick spray or disposable microwave-safe cups
04 - Water
05 - 24 tablespoons sweetened shredded coconut
06 - 1 can pineapple tidbits packed in pineapple juice, drained
07 - 1 bottle coconut cream or coconut syrup

# Instructions:

01 - Combine the Angel Food Cake mix and yellow cake mix in a gallon-sized ziplock bag. Shake thoroughly to mix.
02 - Lightly coat a microwaveable mug with non-stick spray or use a disposable microwave safe paper cup.
03 - In the prepared mug, stir together 3 tablespoons of cake mix and 2 tablespoons of water. Mix in 1 tablespoon of shredded coconut and 1 tablespoon of pineapple tidbits.
04 - Microwave the mixture in the mug on high for 1 minute.
05 - Sprinkle the top with a little coconut, a few pineapple bits, and a generous drizzle of coconut cream or syrup. Serve directly from the mug, or loosen the cake edges with a knife to transfer onto a plate before garnishing.
