Quick Pickled Beet Salad (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 small-medium boiled beets
02 - 1/2 small-medium red onion, thinly sliced
03 - 1/2 cup pitted green olives, finely chopped

→ Dressing

04 - 1/4 cup lemon juice
05 - 3 tbsp olive oil
06 - 1 tbsp honey
07 - 1 tsp lemon zest
08 - 1 tsp kosher salt
09 - 1/2 tsp freshly cracked black pepper

→ Herbs

10 - 1/2 cup finely minced parsley
11 - 1/2 cup finely minced mint

# Instructions:

01 - Combine onion, olives, lemon juice, olive oil, honey, lemon zest, salt, and pepper in serving bowl. Let sit 30-45 minutes.
02 - Cube beets and add to bowl with parsley and mint. Toss together.
03 - Let sit additional 15 minutes before serving. Can be served warm or cold.
