In a large skillet, brown the ground beef over medium heat until crumbled. Drain any excess fat.

Add the diced bell pepper, onion, and chopped garlic to the beef. Cook for about 5 minutes, until the vegetables are soft.

Add beef broth and Worcestershire sauce to the skillet. Stir well and season with salt and pepper. Reduce heat and simmer for about 5 minutes, allowing the liquid to reduce slightly.

Stir in the cream cheese or melting cheese until the mixture is creamy and well combined. Remove the skillet from heat.

Generously spread the mixture onto the bottom halves of the buns. Top each with a slice of provolone or Gouda cheese and place the top halves of the buns over the filling.

Serve warm. For extra flavor, optionally bake the assembled sandwiches in the oven until the cheese melts.
