Peanut Butter Caramel Cookies (Print Version)

# Ingredients:

01 - 1 cup creamy peanut butter.
02 - 1 cup granulated sugar.
03 - 1/2 cup unsalted butter, softened.
04 - 1/2 cup packed brown sugar.
05 - 1 large egg.
06 - 1 teaspoon vanilla extract.
07 - 1 1/2 cups all-purpose flour.
08 - 1 teaspoon baking soda.
09 - 1/4 teaspoon salt.
10 - 20 soft caramels, unwrapped.
11 - 2 tablespoons heavy cream.
12 - Sea salt flakes for topping.

# Instructions:

01 - Heat oven to 350°F. Line baking sheet with parchment.
02 - Beat peanut butter, butter and both sugars until fluffy. Add egg and vanilla.
03 - Mix flour, baking soda and salt. Stir into wet ingredients.
04 - Microwave caramels with cream in short bursts until smooth.
05 - Flatten dough, add caramel center, seal and roll into balls.
06 - Cook 10-12 minutes until edges golden. Top with salt if using.

02 - Let cool before moving.
