Peameal Bacon Breakfast Sliders (Print Version)

# Ingredients:

→ Buns

01 - 12 soft slider buns or dinner rolls

→ Peameal Bacon

02 - 12 slices peameal bacon or back bacon
03 - 1 tablespoon olive oil or butter for cooking

→ Eggs

04 - 6 large eggs
05 - 2 tablespoons butter for cooking
06 - Salt, to taste
07 - Black pepper, to taste

→ Cheese

08 - 6 slices cheddar cheese, halved

→ Condiments & Toppings

09 - 2 tablespoons mayonnaise, optional
10 - 1 tablespoon Dijon mustard, optional
11 - 2 tablespoons maple syrup, for drizzling, optional
12 - Melted butter for brushing tops
13 - Sesame seeds or everything bagel seasoning, optional

# Instructions:

01 - Preheat a skillet or griddle over medium heat. Add olive oil or butter and cook peameal bacon for 3 to 4 minutes per side until golden and fully cooked through. Remove from heat and keep warm.
02 - Crack eggs into a bowl and whisk with a pinch of salt and black pepper. Melt butter in a non-stick skillet over medium heat. Pour eggs into the pan and gently scramble until softly set and creamy, or cook into small folded omelets if preferred. Remove from heat.
03 - Slice slider buns horizontally as a sheet while keeping individual rolls connected. Optionally, spread mayonnaise and Dijon mustard on the cut side of the bottom buns. Layer cooked peameal bacon evenly across buns, top with scrambled eggs and half slices of cheddar cheese. Drizzle with maple syrup if desired. Place the remaining bun halves on top.
04 - Preheat the oven to 175°C. Arrange the assembled slider sheet in a baking dish. Brush the tops with melted butter and sprinkle with sesame seeds or seasoning, if using. Cover loosely with foil and bake for 10 to 12 minutes, until cheese is melted and buns are warmed through.
05 - Slice into individual sliders and serve immediately while warm. Best enjoyed with hash browns, fruit salad, or coffee.

01 - For make-ahead preparation, assemble sliders the night before, cover tightly, and bake fresh in the morning.
02 - For extra flavour, add pickled jalapeños or a drizzle of hot sauce before baking.
03 - Whole wheat buns and reduced-fat cheese can be used for a lighter option.
04 - Enhance richness with caramelized or crispy fried onions added in the layering step.
