Measure out the water and sugar into a heavy-bottomed saucepan. Bring to a boil, then remove from the heat. Add in the cinnamon stick and cover for 30 minutes to 3 hours. Strain and pour into a mason jar. Refrigerate until ready to use.

Puree a peach in a blender. Measure the peach puree, ginger beer, vodka, lime juice, and cinnamon simple syrup into a copper mug or preferred glassware. Stir until combined. Top with ice and serve immediately.
