Parmesan Pretzel Bites (Print Version)

# Ingredients:

01 - ¾ cup warm water
02 - 2 teaspoons honey
03 - 2 ¼ teaspoons active dry yeast
04 - 2 tablespoons salted butter, melted
05 - 2 ¼ cups all-purpose flour
06 - ½ teaspoon kosher salt
07 - ½ cup grated parmesan

08 - 8 cups water
09 - ¼ cup baking soda

→ Toppings

10 - 1 egg, lightly beaten
11 - ¾ teaspoon coarse salt
12 - ⅓ cup grated parmesan

# Instructions:

01 - Combine warm water and honey in the bowl of a stand mixer. Sprinkle yeast on top and let it sit for 5-10 minutes until frothy.
02 - Add butter, flour, parmesan, and salt to the yeast mixture. Use the dough hook to mix on low, then knead on medium for 5 minutes until pliable and slightly tacky.
03 - Place dough in a greased bowl, cover with a damp towel, and let it rise for 45 minutes until doubled in size.
04 - Preheat oven to 350°F. Line a rimmed baking sheet with parchment or a silicone baking mat.
05 - Place dough on a floured surface, divide into 8 pieces, roll into ropes, and cut into 1-inch pieces. Roll each piece into a ball and let rest for 10 minutes.
06 - Bring 8 cups of water to a boil in a large pot. Add baking soda once water reaches a rolling boil.
07 - Add dough pieces to boiling water in batches for 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
08 - Brush pretzels with egg wash and sprinkle with coarse salt and grated parmesan.
09 - Bake in the oven for 16-20 minutes until golden brown.
10 - Enjoy warm with dipping sauces like spicy mustard, marinara, or queso.
