Orange Walnut Cinnamon Rolls (Print Version)

# Ingredients:

→ Dough

01 - 1 1/2 cups all-purpose flour
02 - 1/2 cup whole wheat pastry flour
03 - 3 tablespoons brown sugar
04 - 1/2 teaspoon salt
05 - 1 packet instant yeast
06 - 1 cup unsweetened almond milk or coconut milk
07 - 2 teaspoons vanilla extract
08 - Zest of 1 orange

→ Filling

09 - 3 tablespoons brown sugar
10 - 2 teaspoons cinnamon
11 - 1/4 cup chopped walnuts
12 - 2 tablespoons maple syrup

→ Orange Tahini Glaze

13 - 3 tablespoons tahini
14 - Juice of half an orange
15 - 1 teaspoon vanilla extract
16 - 2 tablespoons maple syrup

→ For Baking

17 - 2 tablespoons unsweetened almond or coconut milk

# Instructions:

01 - Microwave the milk in a microwave-safe mug for 20 seconds until warm but not hot. Add the yeast to the warm milk and let it activate for 5 minutes without stirring. In a mixing bowl, combine flour, brown sugar, salt, and orange zest. Add the activated yeast and vanilla extract. Mix to form a rough dough. Knead the dough on a clean surface for 5 minutes until smooth. Place in a bowl, cover with a cloth, and let it rise for 1 hour in a warm area.
02 - Roll the risen dough on a floured surface into a thin rectangular shape about 1/4 inch thick. Brush the surface evenly with maple syrup, then sprinkle with brown sugar, cinnamon, and the chopped walnuts. Spread the toppings evenly over the dough.
03 - Tightly roll the dough into a log and cut into 12 equal pieces. Arrange the rolls in a baking dish with some space between them. Cover with a cloth and let them rise for another hour in a warm area.
04 - Combine tahini and orange juice in a small bowl and mix until smooth. Stir in maple syrup and vanilla extract. Adjust consistency with almond milk or water if needed.
05 - Preheat the oven to 350°F (175°C). Uncover the rolls and bake for 6 minutes. Remove them to lightly baste the surface with milk, then return to the oven for an additional 10 minutes. Cool for 5-10 minutes before applying the glaze.
06 - Drizzle the glaze over the cooled cinnamon rolls and enjoy.

# Notes:

01 - For a richer dough, add 2 tablespoons of coconut cream or melted vegan butter.
02 - Reheat buns for 15 seconds in the microwave to make them soft again.
03 - Whole wheat pastry flour adds fiber without making the buns dense. Replace with all-purpose flour if preferred.
