Creamy Vegan Ramen (Print Version)

# Ingredients:

01 - 1/2 Tbsp cooking oil.
02 - 4 oz. baby bella mushrooms.
03 - 1.5 cups vegetable broth.
04 - 1 handful fresh spinach.
05 - 1 package ramen noodles (discard seasoning).
06 - 1/2 cup coconut milk (canned).
07 - Optional garnishes:.
08 - 1 green onion, sliced.
09 - 1 Tbsp chili garlic sauce or sriracha.

# Instructions:

01 - Sauté sliced mushrooms in oil over medium heat until soft and dark.
02 - Add broth, bring to boil. Add noodles and cook 3 minutes until tender.
03 - Turn off heat, add spinach and stir until wilted.
04 - Stir in coconut milk. Serve with optional garnishes.
