Zesty Mexican Shrimp Cocktail (Print Version)

# Ingredients:

01 - 2 pounds cooked shrimp, peeled and deveined

→ Fresh Produce

02 - 1/2 cup finely chopped onion
03 - 1 cup chopped tomatoes
04 - 1 jalapeño pepper, seeded and minced
05 - 1 cucumber, peeled and diced
06 - 1/4 cup chopped fresh cilantro
07 - 2 avocados, diced
08 - 1/2 cup fresh lime juice

→ Sauces & Seasonings

09 - 1 cup tomato and clam juice cocktail (Clamato)
10 - 1/4 cup ketchup
11 - 1 tablespoon hot pepper sauce
12 - Salt and black pepper to taste

→ For Serving

13 - Tortilla chips or tostadas
14 - Extra cilantro sprigs for garnish
15 - Lime wedges for serving

# Instructions:

01 - In a small bowl, combine the lime juice and finely chopped onion. Let this mixture sit for 10 minutes to soften the onions and mellow their flavor.
02 - In a large bowl, combine the cooked shrimp, chopped tomatoes, diced cucumber, minced jalapeño, and chopped cilantro. Season with salt and black pepper to taste.
03 - Pour in the tomato-clam juice cocktail, ketchup, and hot sauce. Add the lime-marinated onions with their juice. Stir everything together gently but thoroughly.
04 - Just before serving, carefully fold in the diced avocados to prevent them from becoming mushy.
05 - Cover and refrigerate the cocktail for at least 1 hour to allow the flavors to meld together. Serve cold in glasses or bowls, garnished with extra cilantro and lime wedges. Accompany with tortilla chips or tostadas on the side.

# Notes:

01 - This refreshing cocktail is known as 'Coctel de Camarones' in Mexico and is especially popular in coastal regions.
02 - For best flavor, make this cocktail at least 1 hour before serving, but add the avocados just before serving to keep them fresh.
03 - You can adjust the spice level by adding more or less jalapeño and hot sauce according to your taste.
