Season chicken thighs on both sides with onion powder, garlic powder, Cajun seasoning, pepper, paprika, and Italian herbs. Heat olive oil in a skillet and pan-sear the chicken thighs until golden brown on both sides. Transfer seared chicken to a separate pan.

In the same skillet, melt butter and sauté minced garlic for about 3 minutes until fragrant. Add chicken broth, sun-dried tomatoes, and heavy whipping cream. Season the sauce with salt, pepper, and Italian herbs, and allow it to simmer.

Gradually add shredded Parmesan or Italian cheese to the sauce while stirring constantly until the cheese is melted and the sauce becomes smooth.
