Maple Miso Whipped Sweet Potatoes With Cornmeal Crusted Tofu (Print Version)

# Ingredients:

→ Whipped Sweet Potato

01 - 2 lb sweet potatoes, scrubbed and pierced with a fork (about 3 medium potatoes)
02 - 1 small bulb of garlic, top sliced off to expose the cloves
03 - 1 tbsp yellow miso paste
04 - 2 tsp maple syrup
05 - 1/4–1/2 cup vegetable broth
06 - Avocado oil, for roasting

→ Tofu Cornmeal Nuggets

07 - 1 lb block extra firm tofu, drained and pressed
08 - Juice of half a large lemon
09 - 1 1/2 tbsp tamari
10 - 1 1/2 tbsp avocado oil
11 - 2 tbsp cornmeal
12 - 1 tbsp cornstarch
13 - 1/2 tsp garlic powder
14 - 1/2 tsp onion powder
15 - 1/2 tsp fresh thyme

→ Marinated Kale

16 - 12 kale leaves, stems removed, thinly sliced
17 - 3 stalks spring onions, thinly sliced
18 - Juice of half a large lemon
19 - 2 tsp extra virgin olive oil
20 - 1 tsp maple syrup
21 - 1 tsp dijon mustard
22 - Kosher salt, to taste

# Instructions:

01 - Preheat oven to 425°F. Cut sweet potatoes lengthwise and place cut side up on a baking tray alongside the garlic bulb. Drizzle with avocado oil and flip cut sides down. Roast for 30–40 minutes until soft and caramelized.
02 - Tear tofu into 1-inch chunks and place in a container with lemon juice and tamari. Toss to coat and let sit for 5 minutes. Add oil, cornstarch, cornmeal, and seasonings, then shake gently to coat evenly.
03 - Spread tofu chunks on a parchment-lined baking tray with space between pieces. Bake for 30 minutes, flipping after 20 minutes for even crispness.
04 - In a bowl, combine kale, spring onions, lemon juice, olive oil, maple syrup, mustard, and a pinch of salt. Massage with hands until kale softens. Cover and refrigerate until ready to serve.
05 - When cool enough to handle, scoop sweet potato flesh and roasted garlic into a food processor with miso paste, maple syrup, and 1/4 cup vegetable broth. Blend until smooth, adjusting consistency with more broth if needed.
06 - Spread sweet potato puree on a plate, top with marinated kale and tofu nuggets, and garnish as desired.
