# Ingredients:

01 - 6 medium russet potatoes
02 - 2 tablespoons extra virgin olive oil
03 - 1-2 tablespoons cajun seasoning
04 - ¼ cup creamy ranch dressing, plus extra for dipping

→ Cheese Sauce

05 - 2 tablespoons butter
06 - 2 tablespoons flour
07 - ⅔ cup milk
08 - 2 cups shredded cheddar cheese

# Instructions:

01 - Wash and scrub the potatoes, then pat dry with a paper towel. Peel the potatoes, then slice them into thick fries, ¾ inch by 3 inches.
02 - Bring 1 quart of water to a simmer and season with 3 tablespoons of salt. Using a basket or a colander, place the potatoes over the boiling water, cover, and steam them for about 10-12 minutes, or until a knife inserted comes out clean. Do not overcook to avoid a mushy texture.
03 - Transfer the potatoes to a bowl and drizzle with olive oil. Toss carefully to ensure each fry is coated in oil.
04 - Arrange the potatoes on a nonstick baking sheet in a single, even layer. Bake in a 450°F oven for 10 minutes, rotate the pan, and bake for an additional 5-10 minutes until they are golden brown and crisp, watching carefully to avoid burning.
05 - In a medium-sized saucepan over medium heat, melt the butter. Gradually whisk in the flour and milk until smooth and lump-free. Add shredded cheddar cheese and stir until the cheese is fully melted and the sauce becomes creamy.
06 - Sprinkle cajun seasoning over the baked fries and mix thoroughly. Top the fries with a drizzle of ranch dressing and about ¼ cup of the cheese sauce. Serve with the remaining cheese sauce and extra ranch for dipping.
