01 - 1 lb ground beef
02 - 1 lb ground pork sausage
03 - 4-5 cups cooked rice, prepared with chicken broth
04 - 2 cups chicken broth
05 - ¾ cup green bell pepper, diced
06 - ¾ cup yellow onion, diced
07 - ¼ cup celery, diced
08 - ¼ cup flour
09 - 1 tablespoon bacon grease or cooking oil
10 - 3 bay leaves
11 - 2 tablespoons fresh parsley, chopped
12 - 1 tablespoon dried oregano
13 - 2 teaspoons dried thyme
14 - 2 teaspoons minced garlic
15 - 1 ½ teaspoons salt
16 - 1 teaspoon chili powder
17 - ½ teaspoon ground black pepper
18 - ¼ teaspoon cayenne pepper

# Instructions:

01 - In a large skillet, heat bacon grease or cooking oil. Add ground beef and sausage and cook until browned.
02 - As the meat begins to brown, add the diced bell pepper, onion, and celery. Stir and cook until softened.
03 - Once the meat is fully browned, stir in oregano, thyme, garlic, salt, chili powder, black pepper, and cayenne pepper. Mix well. Then add the flour, ensuring it evenly coats the meat mixture.
04 - Pour in chicken broth and add bay leaves. Scrape the bottom of the skillet to incorporate any browned bits. Let the mixture simmer for 5-8 minutes.
05 - Fold in the cooked rice and fresh parsley. Continue to simmer for an additional 5 minutes. Serve warm.

01 - Traditional Dirty Rice is often made with finely chopped chicken livers for added flavor, but bacon grease serves as a substitute in this recipe.
02 - Optionally, mushrooms or oysters can be added for variation.
