03 - 1/2 lb smoked sausage (andouille or kielbasa), sliced

06 - 1 bell pepper, chopped
07 - 2 cloves garlic, minced
08 - 1 (10 oz) can Rotel (diced tomatoes with green chilies)
09 - 1 1/2 cups chicken broth
10 - 1 cup long grain white rice (uncooked)
11 - 1/2 cup heavy cream
12 - 1 1/2 cups shredded cheddar cheese
13 - 1/2 cup shredded pepper jack cheese
14 - Salt and pepper, to taste
15 - Fresh parsley or green onions (optional garnish)

# Instructions:

01 - Heat olive oil in a large pot over medium heat. Add diced chicken and sliced smoked sausage. Season with Cajun seasoning and cook until browned.
02 - Add chopped onion, bell pepper, and minced garlic to the pot. Sauté until softened.
03 - Stir in diced tomatoes with green chilies, chicken broth, uncooked rice, and additional seasonings. Bring to a boil.
04 - Reduce the heat, cover the pot, and let simmer until the rice is tender, about 20 minutes.
05 - Stir in heavy cream, shredded cheddar cheese, and shredded pepper jack cheese. Mix until the cheeses are fully melted and combined.
