Linzer Cookies Traditional (Print Version)

# Ingredients:

01 - 1 1/2 cups almond flour.
02 - 1 1/2 cups all-purpose flour.
03 - 1/4 teaspoon ground cinnamon.
04 - 1/2 teaspoon ground cloves.
05 - 1/4 teaspoon salt.
06 - 1 large egg, room temperature.
07 - 2 teaspoons vanilla extract.
08 - 1/2 cup (1 stick) unsalted butter, room temperature.
09 - 1/2 cup granulated sugar.
10 - 1/2 cup raspberry jam.
11 - 1 teaspoon water (or dark rum, optional).
12 - 2 tablespoons powdered sugar for garnish.

# Instructions:

01 - Whisk almond flour, all-purpose flour, cinnamon, cloves, and salt in medium bowl.
02 - Whisk egg and vanilla in small bowl.
03 - Beat butter and sugar until light and fluffy, 3-4 minutes.
04 - Add egg mixture to butter mixture, then stir in dry ingredients until combined.
05 - Roll dough between parchment to 1/8 inch thick, chill 2 hours.
06 - Cut rounds for bases and tops with centers cut out for windows.
07 - Bake at 375°F for 7-9 minutes per batch.
08 - Spread warm jam on base cookies, top with window cookies, dust with powdered sugar.
