In another bowl or large measuring cup, stir together the warm water, melted coconut oil or ghee, and maple syrup or honey.

Pour the wet mixture into the dry ingredients and stir until everything is well combined. Let sit for 1-2 minutes until the water is absorbed.

Spray a medium loaf pan (4½ x 8½ inches/11 x 21 cm) with cooking oil spray or grease with coconut oil or ghee.

Stir the bread mixture again, transfer it to the prepared loaf pan, and use a spatula to pat it down and smooth the top.

Let the bread sit at room temperature for at least 2 hours or up to 24 hours for better texture.

Preheat the oven to 350°F (180°C). Bake the bread for 30 minutes.

Remove the pan from the oven, place a cooling rack on top, and carefully invert the bread onto the rack. Return the bread on the rack to the oven and bake for an additional 30-35 minutes until the edges brown and the loaf is slightly puffed.

Remove the loaf from the oven and allow it to cool completely on the rack before slicing.

Store the bread in a sealed container or heavy-duty plastic bag in the refrigerator. For freezing, slice the bread first for easier portioning.
