Life Changing Loaf of Bread (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1½ cups (150g) rolled oats, gluten-free if necessary
02 - 1 cup (145g) sunflower seeds
03 - ½ cup (75g) hemp hearts or flax seeds, roughly ground or cracked
04 - ½ cup (65g) pecans or walnuts, large halves broken into pieces
05 - 4 tablespoons psyllium seed husks or 3 tablespoons psyllium husk powder
06 - 2 tablespoons chia seeds
07 - 1 teaspoon fine grain sea salt

→ Wet Ingredients

08 - 1½ cups (360ml) warm water
09 - 3 tablespoons melted coconut oil or ghee
10 - 1 tablespoon maple syrup or honey

# Instructions:

01 - In a medium bowl, stir together all the dry ingredients.
02 - In another bowl or large measuring cup, stir together the warm water, melted coconut oil or ghee, and maple syrup or honey.
03 - Pour the wet mixture into the dry ingredients and stir until everything is well combined. Let sit for 1-2 minutes until the water is absorbed.
04 - Spray a medium loaf pan (4½ x 8½ inches/11 x 21 cm) with cooking oil spray or grease with coconut oil or ghee.
05 - Stir the bread mixture again, transfer it to the prepared loaf pan, and use a spatula to pat it down and smooth the top.
06 - Let the bread sit at room temperature for at least 2 hours or up to 24 hours for better texture.
07 - Preheat the oven to 350°F (180°C). Bake the bread for 30 minutes.
08 - Remove the pan from the oven, place a cooling rack on top, and carefully invert the bread onto the rack. Return the bread on the rack to the oven and bake for an additional 30-35 minutes until the edges brown and the loaf is slightly puffed.
09 - Remove the loaf from the oven and allow it to cool completely on the rack before slicing.
10 - Store the bread in a sealed container or heavy-duty plastic bag in the refrigerator. For freezing, slice the bread first for easier portioning.

# Notes:

01 - Replace pecans or walnuts with pumpkin seeds for a nut-free variation.
02 - Use a metal cooling rack with wires approximately ½ inch (1 cm) apart for best results when inverting the loaf.
03 - Ensure to cut uniform slices to maintain accurate nutritional values.
