Leftover Mashed Potato Puffs (Print Version)

# Ingredients:

01 - 2 cups leftover mashed potatoes
02 - 1/2 cup shredded cheddar cheese
03 - 1/4 cup breadcrumbs
04 - 1 egg
05 - 1/4 teaspoon garlic powder
06 - 1/4 teaspoon onion powder
07 - 1 tablespoon fresh parsley
08 - Salt to taste
09 - Pepper to taste

10 - Olive oil or cooking spray

# Instructions:

01 - In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, breadcrumbs, egg, garlic powder, onion powder, and fresh parsley if using. Season with salt and pepper to taste. Mix everything thoroughly with a spoon or hands until the mixture is firm yet slightly sticky.
02 - Scoop about a tablespoon of the mixture and roll it into a ball. Place on a tray or plate. Repeat until all the mixture is used. For a crispy coating, optionally roll the balls in additional breadcrumbs or panko.
03 - Heat olive oil in a frying pan over medium heat. Once hot, place the potato balls into the pan carefully. Fry for 2-3 minutes per side, or until golden brown and crispy. Turn gently with tongs or a slotted spoon.
04 - Transfer the fried puffs to a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce or on their own.

01 - For best results, use slightly chilled leftover mashed potatoes to ensure the mixture holds together well.
