Iraqi Date Cookies (Print Version)

# Ingredients:

01 - 1 cup ground almonds.
02 - 1 1/4 cups rice flour.
03 - 1 tsp salt.
04 - 1/4 tsp cinnamon.
05 - 1/4 tsp cardamom powder.
06 - 1/3 cup (80ml) melted coconut oil.
07 - 1/3 cup (80ml) milk of choice.
08 - 250g soft dates.
09 - 1/2 cup (120ml) water.
10 - 1 tsp cinnamon.
11 - 1 tsp cardamom.
12 - Pinch of salt.
13 - Sesame seeds for topping.

# Instructions:

01 - Cook dates with water over low/medium heat, mashing until smooth and spreadable.
02 - Mix almonds, flour, salt, spices. Add oil and milk to form dough. Chill 20-30 minutes if soft.
03 - Roll dough halves into 28x18cm rectangles. Spread with date filling.
04 - Roll into logs using parchment. Freeze 30 minutes then slice into 1/2-inch pieces.
05 - Top with sesame seeds. Bake at 350°F for 20 minutes until golden.
06 - Cool completely before serving. Store in refrigerator.

01 - Can be made gluten-free with rice flour.
02 - Stores well in refrigerator.
