Kiwi Blueberry Mojito Twist (Print Version)

# Ingredients:

→ Fruits and Sweeteners

01 - 2 ripe kiwis, peeled and chopped
02 - 2 tablespoons granulated sugar
03 - 2 tablespoons freshly squeezed lime juice
04 - 120 millilitres fresh blueberries

→ Herbs and Liquids

05 - 12 fresh mint leaves
06 - 240 millilitres chilled sparkling water
07 - 120 millilitres light rum, optional

→ Other

08 - Ice cubes
09 - Decorating sugar, blue or green

# Instructions:

01 - Place chopped kiwis, sugar, and lime juice in a small food processor and blend until a coarse puree forms.
02 - In a mixing bowl, combine the kiwi puree with light rum if using. Adjust quantity of rum to taste.
03 - Gently crush the blueberries with a muddler to release juice without over-muddling.
04 - Rub a fresh lime wedge around the rim of each glass and dip in colored decorating sugar.
05 - Divide the kiwi puree between two glasses. Add a layer of ice, a few mint leaves, and kiwi slices if desired. Add another layer of ice, scatter in the crushed blueberries, more mint leaves, and top with whole blueberries.
06 - Pour chilled sparkling water into each glass. Stir gently to combine. Taste and adjust sweetness or rum as desired. Garnish each serving with additional blueberries and a slice of kiwi.

01 - Chill glasses ahead of time to enhance presentation and maintain temperature.
02 - Muddle berries gently to avoid cloudiness and bitterness in the drink.
03 - Taste throughout assembly and adjust sugar and lime juice for optimal balance.
04 - For a non-alcoholic version, omit the rum and substitute with additional sparkling water or a splash of white grape juice.
05 - Experiment with blackberries or raspberries as alternatives to blueberries.
06 - Add pineapple juice for a tropical variation.
