Place chopped kiwis, sugar, and lime juice in a small food processor and blend until a coarse puree forms.

In a mixing bowl, combine the kiwi puree with light rum if using. Adjust quantity of rum to taste.

Gently crush the blueberries with a muddler to release juice without over-muddling.

Rub a fresh lime wedge around the rim of each glass and dip in colored decorating sugar.

Divide the kiwi puree between two glasses. Add a layer of ice, a few mint leaves, and kiwi slices if desired. Add another layer of ice, scatter in the crushed blueberries, more mint leaves, and top with whole blueberries.

Pour chilled sparkling water into each glass. Stir gently to combine. Taste and adjust sweetness or rum as desired. Garnish each serving with additional blueberries and a slice of kiwi.
