Break the eggs into a bowl, pour in the milk, and season with some salt and pepper. Beat it all together until it’s smooth and a little bubbly. Leave it aside for later.

Take a tablespoon of butter and melt it in a non-stick pan over medium heat. Toss in the kielbasa slices and stir occasionally until they turn golden, roughly 5 minutes.

Add the minced onion to the pan with the sausage. Let it soften and release its aroma for about 3 minutes while stirring.

Turn the heat down to medium-low and throw in the rest of the butter. Once it melts, pour the egg mix into the pan. Let it sit for a moment, then gently fold the eggs over themselves with a spatula. Stir occasionally until the eggs are cooked how you like them.

If you’re adding cheese or herbs, mix them in when the eggs are almost cooked but still a little wet. The heat will melt the cheese perfectly. Serve hot with toast, veggies, or your favorite side. Sprinkle extra chives or paprika on top, if you’d like.
