Kielbasa Sausage Cheesy Potato Casserole (Print Version)

01 - 400 g smoked kielbasa sausage, sliced into 6 mm rounds
02 - 1.5 kg potatoes (Yukon Gold or Russet), diced or thinly sliced
03 - 200 g sharp cheddar cheese, shredded and divided
04 - 1 small onion, finely chopped
05 - 2 cloves garlic, minced
06 - 43 g unsalted butter
07 - 23 g all-purpose flour
08 - 600 ml whole milk
09 - 5 ml Dijon mustard (optional)
10 - 5 g salt
11 - 2.5 g black pepper
12 - 2.5 g smoked paprika (optional)
13 - 2.5 g garlic powder

14 - 60 g crushed crackers or plain breadcrumbs
15 - 14 g melted butter
16 - Chopped parsley or green onions, for garnish

# Instructions:

01 - Preheat oven to 190°C. Lightly grease a 33×23 cm baking dish.
02 - Heat a skillet over medium. Cook kielbasa until browned on both sides, about 5–7 minutes. Remove and set aside.
03 - Melt butter in a saucepan over medium heat. Add onion and cook 2–3 minutes until softened. Stir in garlic and cook 30 seconds.
04 - Add flour to saucepan and stir constantly for 1 minute. Gradually whisk in milk until smooth. Add salt, pepper, paprika, garlic powder, and mustard. Cook, stirring, until the sauce thickens, 5–7 minutes. Stir in 150 g cheddar cheese until melted and creamy.
05 - Layer potatoes evenly in prepared baking dish. Top with browned kielbasa. Pour cheese sauce over and stir gently to combine.
06 - Sprinkle remaining 50 g cheddar on top. For a crunchy topping, mix crushed crackers or breadcrumbs with melted butter and sprinkle over casserole.
07 - Cover with foil and bake 40 minutes. Uncover and bake 20–25 minutes more, until golden and potatoes are fork-tender. Rest 5–10 minutes before serving.

01 - For even cooking, slice potatoes to an even thickness and arrange in a single, overlapping layer.
02 - Pre-shredded cheese may include anti-caking agents; freshly shredded cheese melts best.
03 - To reheat leftovers, use an oven at 175°C until heated through for best texture.
04 - Add broccoli, peas, or bell peppers to the potato layer for added vegetables.
