Preheat oven to 190°C. Lightly grease a 33×23 cm baking dish.

Heat a skillet over medium. Cook kielbasa until browned on both sides, about 5–7 minutes. Remove and set aside.

Melt butter in a saucepan over medium heat. Add onion and cook 2–3 minutes until softened. Stir in garlic and cook 30 seconds.

Add flour to saucepan and stir constantly for 1 minute. Gradually whisk in milk until smooth. Add salt, pepper, paprika, garlic powder, and mustard. Cook, stirring, until the sauce thickens, 5–7 minutes. Stir in 150 g cheddar cheese until melted and creamy.

Layer potatoes evenly in prepared baking dish. Top with browned kielbasa. Pour cheese sauce over and stir gently to combine.

Sprinkle remaining 50 g cheddar on top. For a crunchy topping, mix crushed crackers or breadcrumbs with melted butter and sprinkle over casserole.

Cover with foil and bake 40 minutes. Uncover and bake 20–25 minutes more, until golden and potatoes are fork-tender. Rest 5–10 minutes before serving.
