Stovetop Chicken Breasts (Print Version)

# Ingredients:

01 - 3 tablespoons vegetable or canola oil, divided.
02 - 4 boneless, skinless chicken breasts (1 pound total).
03 - Cooking spray.
04 - Salt and fresh ground pepper.
05 - 1/2 teaspoon garlic powder.
06 - 1/2 teaspoon onion powder.
07 - 1/2 teaspoon dried basil.
08 - 1/2 teaspoon smoked or sweet paprika.
09 - 2 tablespoons unsalted butter, divided.

# Instructions:

01 - Heat 1-1/2 tablespoons vegetable oil in large skillet over medium-high heat.
02 - Pat chicken dry, rub with oil. Mix seasonings and coat chicken evenly on both sides.
03 - Cook 2 chicken breasts for 5-7 minutes without moving. Flip, add 1 tablespoon butter, cook 7 more minutes until internal temperature reaches 165°F.
04 - Remove first batch, keep covered. Repeat process with remaining chicken and butter.
05 - Let chicken rest for 5 minutes before slicing and serving.

# Notes:

01 - Chicken should not be thicker than 1-inch for even cooking.
02 - Use vegetable oil for its higher smoke point.
03 - Don't move chicken while cooking for better sear.
