Jalapeño Popper Stuffed Onion Rings (Print Version)

# Ingredients:

01 - 2 large yellow onions
02 - 8 oz cream cheese, softened
03 - 1 cup shredded cheddar cheese
04 - 2-3 jalapeños, diced
05 - 1 cup breadcrumbs
06 - 2 eggs
07 - 1 cup all-purpose flour
08 - 2 cups vegetable oil
09 - Salt, to taste
10 - Pepper, to taste

# Instructions:

01 - Peel and slice the onions into 1-inch rings, separating the rings carefully. Mix cream cheese, cheddar cheese, and diced jalapeños to create the filling. Fill each onion ring with the cream cheese mixture.
02 - Set up a breading station with three bowls: one for flour, one for beaten eggs, and one for breadcrumbs. Coat each stuffed onion ring in flour, then dip in the beaten egg, and finally coat with breadcrumbs. Heat vegetable oil in a frying pan over medium-high heat and fry the onion rings until golden brown.
03 - Drain the fried onion rings on paper towels to remove excess oil. Sprinkle with salt and pepper to taste. Serve hot, optionally paired with a side of creamy ranch dressing for dipping.

# Notes:

01 - For a variation, try using smoked cheddar instead of regular cheddar to add a deeper flavor.
02 - Ensure the oil is sufficiently hot before frying to achieve optimal crispiness while avoiding excessive oil absorption.
