Italian Zucchini Bake (Print Version)

# Ingredients:

01 - 1½ pounds zucchini.
02 - 1 small white onion.
03 - 2 cloves garlic.
04 - ½ cup olive oil.
05 - 4 extra-large eggs.
06 - 1 cup flour.
07 - 4 teaspoons baking powder.
08 - ½ cup grated Parmesan.
09 - ½ cup grated Romano.
10 - ½ teaspoon salt.
11 - ½ teaspoon pepper.
12 - ¼ teaspoon dried basil.
13 - Butter for greasing.

# Instructions:

01 - Heat oven to 375°F. Slice zucchini 1/8 inch thick, pat dry.
02 - Combine zucchini, onion, garlic. Beat oil and eggs, add to vegetables.
03 - Mix in flour, baking powder, cheeses and seasonings.
04 - Transfer to buttered 9x13 pan. Bake 55-60 minutes until browned.

01 - Weigh zucchini for accuracy.
02 - Avoid large seedy zucchini.
03 - Rest 5 minutes before slicing.
