Italian Sausage Parmesan Soup (Print Version)

# Ingredients:

01 - 1 pound Italian sausage.
02 - 1 tablespoon olive oil.
03 - 1 onion, chopped.
04 - 3 garlic cloves, minced.
05 - 2 carrots, diced.
06 - 2 celery stalks, diced.
07 - 4 cups chicken broth.
08 - 14.5 ounces diced tomatoes.
09 - 1 cup heavy cream.
10 - 1 cup Parmesan cheese.
11 - 2 cups spinach.
12 - 1 teaspoon Italian seasoning.
13 - ΒΌ teaspoon red pepper flakes.
14 - Salt and pepper to taste.

# Instructions:

01 - Cook sausage in oil until browned, remove and set aside.
02 - Cook vegetables until soft, add garlic for 1 minute.
03 - Add broth, tomatoes, sausage and seasonings. Cook 15 minutes.
04 - Stir in cream and cheese. Add spinach until wilted. Season to taste.

# Notes:

01 - Can use hot sausage for more heat.
02 - Cook pasta separately if using.
