Italian Sandwich Fried Rice (Print Version)

# Ingredients:

→ Main Ingredients

01 - 3 cups leftover long grain rice (at least 1 day old)
02 - 1 cup diced halloumi
03 - 3 slices salami, diced
04 - 3 slices mortadella, diced
05 - 3 slices rosemary ham, diced
06 - 1/2 small onion, diced
07 - 1 egg

→ Vegetables and Herbs

08 - 1/4 cup diced banana peppers
09 - 1/4 cup diced roasted red peppers
10 - 1/4 cup chopped basil
11 - Chopped romaine for serving

→ Sauces and Oils

12 - Olive oil for cooking
13 - 2 tablespoons sesame oil
14 - 2 tablespoons soy sauce
15 - 2 tablespoons balsamic, plus more for serving

# Instructions:

01 - Heat olive oil in pan over high heat. Cook onion 5 minutes, add halloumi and cook 5 minutes until edges brown.
02 - Add diced meats and cook 3-5 minutes until slightly browned.
03 - Add rice and cook 5 minutes, stirring occasionally.
04 - Make space in rice, add egg and scramble, then mix with rice.
05 - Add remaining ingredients, cook 5 minutes more. Serve topped with lettuce and extra balsamic.
