Irish Blackberry Fool (Print Version)

# Ingredients:

→ Berry Syrup

01 - 3 cups fresh blackberries, plus extra for garnish
02 - 1 tablespoon Grand Marnier, optional
03 - 3 tablespoons fresh lemon juice
04 - ½ cup granulated sugar

→ Cream Layer

05 - 1 teaspoon unflavored gelatin
06 - 4 teaspoons cold water
07 - 1 ¼ cups heavy cream
08 - 3 tablespoons powdered sugar
09 - 1 teaspoon vanilla bean paste or extract
10 - 1 cup plain Greek yogurt
11 - Mint leaves for garnish

# Instructions:

01 - Combine blackberries, Grand Marnier, lemon juice, and sugar in a medium saucepan. Bring to a boil over medium heat, reduce to a steady simmer, and cook for 8-10 minutes until the mixture becomes syrupy and the berries lose their shape. Cool completely.
02 - Combine gelatin and cold water in a small microwave-safe bowl and stir. Microwave for 15 seconds, stir, and allow to cool slightly.
03 - In a medium bowl, whisk heavy cream until it begins to thicken, about 1-2 minutes. Add the gelatin mixture, powdered sugar, and vanilla, and continue whisking until soft peaks form, about 2-3 minutes.
04 - Place Greek yogurt in a medium bowl and gently fold in the whipped cream mixture until combined.
05 - Layer the cooled berry syrup and cream mixture into six ¾-1 cup clear glass bowls or jars. Garnish with fresh blackberries and mint leaves.

# Notes:

01 - The number of servings depends on the size of your containers. Using 8-ounce jars yields approximately 6 servings.
