Instant Pot Beef Ragu (Print Version)

# Ingredients:

01 - 2 lbs beef chuck roast, chunked.
02 - 2 tbsp Italian seasoning.
03 - 2 tbsp olive oil, divided.
04 - 1 cup onion, diced.
05 - 1/2 cup carrots, diced.
06 - 1/2 cup celery, diced.
07 - 4 garlic cloves, minced.
08 - 1/4 cup red wine.
09 - 1 tsp kosher salt.
10 - 1 tsp black pepper.
11 - 1 1/2 cups beef broth.
12 - 6 oz tomato paste.
13 - 15 oz crushed tomatoes.
14 - 2 sprigs fresh rosemary or thyme.

# Instructions:

01 - Season beef chunks with Italian seasoning.
02 - Set Instant Pot to Sauté-Normal. Add 1 tbsp oil.
03 - Sear beef 4 minutes until browned. Remove.
04 - Add remaining oil. Cook onion, carrots, celery 4 minutes.
05 - Add garlic, cook 1 minute.
06 - Add wine to deglaze pot.
07 - Return beef. Add salt, pepper, broth, tomato paste, tomatoes, herbs.
08 - Pressure cook High 30 minutes.
09 - Natural release 10 minutes.
10 - Remove beef, shred, return to pot.
11 - Optional: Sauté 10-15 minutes to thicken sauce.

# Notes:

01 - Can skip wine and use extra broth.
02 - Serve over pasta, polenta or squash.
03 - Keeps 5 days refrigerated.
04 - Sauce thickens more during final sauté.
