Hot and Sour Soup (Print Version)

# Ingredients:

01 - 8 cups chicken or vegetable broth.
02 - 3 teaspoons fresh ginger or 1½ teaspoon dried.
03 - 8 ounces mushrooms, sliced.
04 - 5 dried wood ear mushrooms, soaked.
05 - 4 tablespoons rice vinegar.
06 - 1½ tablespoons red wine vinegar.
07 - ¼ cup soy sauce.
08 - 2 tablespoons chili garlic sauce.
09 - 1½ teaspoons sesame oil.
10 - 1 teaspoon white pepper.
11 - 8 ounces bamboo shoots.
12 - 8 ounces firm tofu, cubed.
13 - 4 tablespoons cornstarch.
14 - 4 tablespoons water.
15 - 2 eggs, whisked.
16 - 3 green onions, sliced.
17 - Crispy chow mein noodles for garnish.

# Instructions:

01 - Combine broth ingredients, boil 6-8 minutes.
02 - Add tofu and bamboo shoots.
03 - Stir in cornstarch-water mixture, simmer 1-2 minutes.
04 - Stir soup slowly while pouring whisked eggs to create ribbons. Let set 1 minute.
05 - Adjust spice level, garnish with green onions and noodles.

# Notes:

01 - Can use vegetable broth for vegetarian version.
02 - Adjust chili sauce for desired heat.
03 - Various mushroom types work well.
