Honey Pineapple Grilled Chicken (Print Version)

# Ingredients:

01 - 4 boneless, skinless chicken breasts
02 - 1/2 cup pineapple juice
03 - 1/4 cup honey
04 - 2 tablespoons soy sauce
05 - 2 tablespoons olive oil
06 - 2 cloves garlic, minced
07 - 1 tablespoon fresh lime juice
08 - 1 teaspoon ground ginger
09 - Salt to taste
10 - Pepper to taste
11 - Fresh cilantro (optional, for garnish)

# Instructions:

01 - In a medium bowl, whisk together pineapple juice, honey, soy sauce, olive oil, garlic, lime juice, ginger, salt, and pepper.
02 - Place the chicken breasts in a large zip-top bag or shallow dish and pour the marinade over the chicken. Seal or cover, then refrigerate for at least 1 hour, or up to 4 hours for more flavor.
03 - Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
04 - Remove the chicken from the marinade (discard any remaining marinade). Grill the chicken for 6-8 minutes per side, or until it reaches an internal temperature of 165°F (75°C) and has nice grill marks.
05 - Once cooked, remove the chicken from the grill and let it rest for a few minutes. Garnish with fresh cilantro if desired. Serve with your favorite side dishes.
