Homemade McGriddle Breakfast Sandwich (Print Version)

# Ingredients:

→ Pancake Mix

01 - 1 ½ cups all-purpose flour
02 - 3 ½ teaspoons baking powder
03 - 2 tablespoons white sugar
04 - ¼ teaspoon salt
05 - 1 ¼ cups milk
06 - 1 ½ teaspoons vanilla extract
07 - 4 tablespoons butter, melted
08 - 4 tablespoons pure maple syrup, separated

→ McGriddle Fillings

09 - 4 large eggs
10 - 4 slices of cheese
11 - 4 cooked bacon slices or sausage patties

# Instructions:

01 - Sift flour, baking powder, sugar, and salt together in a large mixing bowl. Add milk, vanilla extract, melted butter, and 1 egg; mix until smooth. The batter will be thick.
02 - Heat an electric griddle or pan over medium-low heat and spray with cooking spray. Spray the inside of a metal biscuit cutter with non-stick spray and place it in the pan. Scoop the batter into the biscuit cutter, add 2 teaspoons of maple syrup into the center, and use a toothpick to lightly mix it. Cook until bubbles form and the edges are dry, about 2 minutes. Carefully remove the cutter, flip the pancake, and cook until browned on the other side. Repeat with remaining batter.
03 - While pancakes are cooking, cook bacon slices or sausage patties in a separate frying pan.
04 - Once pancakes are cooked, place them on a dish and cover with aluminum foil to keep warm.
05 - Clean the biscuit cutter and spray it again with cooking spray. Heat a skillet to medium heat and drop an egg into the center of the cutter. Add a pinch of salt and cook until the sides are slightly set, about 2 minutes. Remove the cutter carefully, flip the egg, and cook the other side. Repeat for all 4 eggs.
06 - To assemble, place a pancake on a plate. Top with a slice of cheese, cooked egg, bacon or sausage, and another pancake. Serve immediately.

# Notes:

01 - The pancake buns can be frozen for up to 1 month. Layer pancakes with waxed paper and store in a freezer bag or airtight container.
02 - To reheat frozen pancakes, place them in a toaster or toaster oven until warm.
03 - For a dairy-free option, use dairy-free milk, replace butter with vegetable oil, and omit cheese.
04 - You can use a mason jar lid or ring mold instead of a biscuit cutter.
