Holiday Antipasto Cream Cheese Log (Print Version)

# Ingredients:

01 - 8 ounces cream cheese, softened.
02 - 1/2 cup roasted red peppers, drained and chopped.
03 - 1/3 cup mixed olives, chopped.
04 - 1/4 cup marinated artichokes, chopped.
05 - 1/4 cup grated Parmesan.
06 - 1/2 teaspoon Italian seasoning.
07 - 1/4 teaspoon garlic powder.
08 - 1/4 teaspoon black pepper.
09 - 1/2 cup fresh parsley, chopped.
10 - Fresh rosemary and cranberries for garnish.

# Instructions:

01 - Combine cream cheese, peppers, olives, artichokes, Parmesan and seasonings.
02 - Place on plastic wrap, form into log shape.
03 - Wrap tightly, refrigerate 2 hours until firm.
04 - Roll chilled log in chopped parsley.
05 - Add rosemary sprigs and cranberries, serve with crackers.

# Notes:

01 - Drain vegetables well to prevent excess moisture.
02 - Can make up to 3 days ahead.
03 - Add sun-dried tomatoes or capers for extra flavor.
